DOES HEAT DEGRADE PSILOCYBIN? WHAT IS THE BEST WAY TO STORE MUSHROOMS?
ITW.NEWS has been searching for answers to these questions and are thrilled to say we finally have answers! We were planning to run our own experiments, until we found that a group of Czech researchers put all the storage and heat questions to rest.
They tested for four tryptamines; psilocybin, psilocin, norbaeocystin, and aeruginascin. The general analysis of the data is that BOTH extreme heat and extreme cold destroy tryptamines. If materials are exposed to boiling temperatures for 30 minutes, there will be a large drop in tryptamine stability.
The team also tested storage methods. They found that storing cracker dry mushrooms at room temperature in the dark is the best method for storage. SHOCKING: freezing your mushrooms will degrade them faster than when they are exposed to warm temperatures.
So, what does this all mean for the end user?
- Room temperature, cracker dry storage, in a blackout container is best.
- Don’t freeze your teas.
- Cooking fresh mushrooms holds more tryptamines than any other method, when accounting for water weight.
- Fresh Mushrooms should be added to your recipe LAST. Avoid cooking longer than 30 min
- Cook below boiling temps!
