Our friends at Fungaia say the Pink Oyster has a stronger flavor and denser flesh than other oyster species, and Paul enjoys it best roasted with plenty of oil, in soups or as a compliment to red meat or fish. It grows rapidly, eats without discretion, and fruits readily from pasteurized straw, making it an economical and rewarding species for small-scale cultivators. A warm-weather variety, this is a great species for midsummer grows.
